6:00pm Passed Hors d’oeuvres to include:

  • Endive w/ blue cheese mousse, candied walnuts and grapes
  • Fingerling potato with soubise
  • Chicken satay on sugar cane.  Peanut sauce.
  • Phyllo cups with goat cheese roasted tomato and pesto

7:30-10:00 Dinner

  • Asian salad with Napa cabbage, orange, broccoli, snap peas, crisp rice noodles

HOT BUFFET 

  • Breast of chicken with carrot risotto and tarragon walnut brown butter
  • Wisconsin rushing waters trout with French beans, marble potatoes and almonds
  • Penne with butternut squash, parmesan and sage
  • Carved beef tenderloin
  • Grilled salmon on a plank with salmon pastrami
